I take a look at the store from the outside the same day, then we talk for fifteen or twenty minutes, by phone or video, whichever you prefer. After the call you get a short email: what I found, what I'd do first, how many hours it should take at $45 an hour, and what you'd need to give me access to. If it makes sense to you, you say go and I start. If it doesn't, you've lost nothing but a short call, and you still have the list.
